Wishing Wellness Quick Pickles

Love making our own pickles and adding herbs from our garden.

A basic quick pickle recipe can be made with almost any vegetable.

We use:

Garlic, smashed or sliced (we love using a lot)

1 cup vinegar (white, apple cider, or rice)

1 cup brine (We add about 1 Tbsp per 1 cup warm water)

Mix and keep in fridge.

(feel free to add any spices, seasoning, herbs etc.)

Quick pickles are different from traditional fermented pickles in that they are not 'canned' and need to be kept in the fridge.

Wishing Wellness Asian Style Citrus Bok Choy & Shrimp

Really you can use any vegetable or protein- like broccoli, carrots etc. or chicken, beef, tofu. Just make sure to adjust cooking times.

This is a healthy version of an 'orange chicken' dish that you can order at a typical Chinese restaurant. It is sugar free, gluten free and delicious.

Ingredients:
¼ cup lemon juice (you can use orange)
Splash to 1 tsp fish sauce
2 tablespoons coconut aminos
2 tablespoons grated fresh ginger
3-4 garlic cloves, crushed
½ teaspoon salt
2 tablespoons coconut oil
1 lb of shrimp (peeled)
1 pound of baby bok choy, or 1 whole big bok choy cut into pieces about 1-2 inches
1 tablespoon arrowroot powder (optional but this gives it that saucy thickness)

Whisk together lemon juice, fish sauce, coconut aminos, ginger, garlic, and salt. Set aside.

In a large skillet, heat coconut oil over medium-high heat. When hot, add the 1 clove if garlic and shrimp. Stir fry for 1-2 min

Add bok choy and continue to stir for 2-3 min until bok choy is soft
Add sauce and cook for 2-3 min

Whisk arrowroot powder and 3 Tbls of water and add slowly to pan to thicken sauce then remove from heat

Serve with cauliflower rice

Ingredients

1 head of red cabbage
1 bunch cilantro
2 carrots
1 bunch green onions (green part)
Dressing
½ cup apple cider vinegar
4 carrots
1 bunch of green onions (white part)
1 inch of ginger
salt and pepper
1 tsp Dijon mustard
juice and zest of 1 orange

We usually double up the dressing recipe and freeze 1/2 to use for another batch.

Check in. How is everyone doing?

We are doing great and are so grateful to our Wishing Wellness Family for all of your support and kind words over the past couple of weeks.

We continue to ask that any of our patients who are experiencing any symptoms of fever, coughing, shortness of breath, sudden loss of smell or diarrhea CALL or TEXT us right away.

We are still seeing patients at the office 'on a need' basis. The VAST majority of appointments we've been able to schedule as video or phone calls and we are so grateful to all of you for your patience and understanding.

Keeping our office visits to virtual, for the time being, keeps both YOU and US safe.

Even before this pandemic we cleaned our office & equipment between each patient.

Other things we are doing to stay safe: Wiping down doors and door knobs, using hand sanitizers, washing our hands, wearing latex gloves, cleaning our phones and computers several times a day and scheduling additional time between patients so that there is NO OVERLAP of clients in our waiting room.

Things we do when we get home: taking our shoes and ALL our outside clothes off by the front door before entering the house and not wearing them again until they have been left untouched for 3 day, wiped down, washed or dry cleaned. Taking a shower before and after leaving the house.

We have a car kit with disinfectant wipes and hand sanitizer as well as a by our front door.

DPC is a model of healthcare delivery where patients work directly with their physicians for medical services. This removes the "middlemen" of the primary healthcare system. No middleman means less red tape and a lower care cost for you.


To access our care model, clients pay a monthly fee, similar to a gym membership. This gives members direct access to Dr Scott, same day or next day acute visits and a trusted partner in your health journey.

All of our standard outpatient primary care services are included in this membership. This is not to say that our practice can replace a health insurance plan entirely, especially when it comes to emergency care needs. COVID-19 is much more prevalent than the numbers suggest. Because of the strict testing guidelines, numerous people who are likely caring the virus are not being able to confirm their status. Anti- body testing is still in the early stages of development but hopefully in the near future will be accurate and readily available.
The decision to self quarantine is difficult and many people will not be taking this important precaution which will put others at risk. The reason it is important to practice ‘social distancing’ is to ‘flatten the curve’ and not overwhelm our healthcare system, which will save lives. Those with chronic medical conditions and the elderly are at high risk.
We recommend all high-risk patients to avoid any non-essential public exposure.
We are using masks to keep all of us safe. We are scheduling appointments with time in between to allow for more easy social distancing in our offices.

Harvesting Roses & Rose Water

Spring is here in Las Vegas and with that comes a plethora of beautiful flowers. Using roses in natural remedies is a tradition that dates back thousands of years. Roses are believed to have many medicinal benefits and have been used as a pain reliever, bronchodilator, anti-convulsive, anti-microbial and as an anti-inflammatory.

Roses may be used used as cough syrup, to treat reflux, as a laxative, and to reduce blood sugar and the oil is said to treat depression and stress. It also may also have benefits for wound healing, allergies, skin conditions and headaches.

To make rose water tea, steep a handful of rose petals in boiling water for ten minutes then strain. Drink up to two cups daily. We like to mix ours with ginger & honey.
Rose petals are mostly water but they do contain vitamins A, C, E, and B. Drinking rose water will help you stay hydrated and is purported to have anti-aging benefits as well as be mood enhancing.
This is fun and easy to make.

Harvesting and Using Aloe Vera

We have an #aloe plant we bought at Trader Joe’s about 7 years ago that we’ve kept outside and even moved with.

It has since gotten huge and made dozens of babies. We trim the large leaves on the bottom to keep it healthy, make room for the babies and to make aloe cubes which we use to heal scrapes & burns, mini facials and smoothies.

About 5-6 large leaves yields 2 ice cube trays worth of aloe cubes. You can use a food processor or a hand held blender.

Really love eating this soup from our local Thai restaurants so experimented with making a healthy sugar free version with lots of vegetables and ingredients from our #garden

We made it using:

Ingredients

Saute one white onion with sesame oil or coconut oil
Garlic to taste- we used about 1/2 head
1/2 Thai Chili
Thumb of ginger
Lemongrass stalk
2 table spoons of garlic chili sauce

Then add:
4 cups of broth -we used chicken
2 cans of coconut milk (we used one of cream)
Shrimp (or Chicken or tofu)
Mushrooms
Red pepper
Can of bamboo shoots (optional)
2 Tbsp of Honey
2 Tbsp of fish sauce
Juice of 1 whole lemon
Added:
Bunch of Swiss Chard (optional) at the end

Dr Scott on Cannabis and Wellness with Billy Hayes

Over the next couple of months Dr. Scott will be speaking at events with Billy Hayes who will share his story from his book, which was made into a movie: "Midnight Express". Detailing his incarceration in a Turkish prison for smuggling two kilos of hashish out of the county and his subsequent escape five years later, Billy shares his story as a Cannabis Advocate.

Dr. Scott will offer his expertise in the history of medical cannabis, as well as the use and management of cannabis in health and wellness.

Cannabis has been used medicinally for thousands of years and only recently has there been a resurgence in the exploration and research into the medical benefits of this powerful herb. As we learn more about the safety and efficacy of marijuana it is important to have a physician who is knowledgable about the forms of administration, dose and timing of the products, to suit your needs.
