Lime Cubes

Making #lime cubes for cooking and flavoring water. Juice the limes and freeze in an ice cube tray and then transfer to a bag and keep frozen until needed.

These are so convenient to have in the freezer for anytime a recipe calls for fresh lime juice or just to add to tea or water. These were limes from a friends tree that we stored in the fridge for a few months but they were still juicy.

Limes are high in vitamin C, providing over 20% of your daily needs. They also contain small amounts of iron, calcium, vitamin B6, thiamine, potassium, and more.

Wishing Wellness Apple Cake

This Apple Cake is #SugarFree #GlutenFree and #AIP #PALEO Friendly
and it still tastes good. Eat it as a dessert or breakfast!

INGREDIENTS
3 medium apples
½ cup honey
¾ cup arrowroot starch
10 tablespoons coconut flour
3 teaspoons cinnamon
1½ teaspoons baking soda
1 teaspoon cream of tartar
¼ teaspoon sea salt
¾ cup full-fat coconut milk
½ cup coconut oil, melted
¼ cup applesauce (sugar free)
⅛ cup honey
2 teaspoons apple cider vinegar

INSTRUCTIONS
1. Preheat oven to 350 degrees.
2. Grease a 9'' round cake pan or spring form with coconut oil.
3. Cut a piece of parchment to fit on bottom of cake pan and grease parchment, as well.
4. Slice 2 of the apples.
5. Dice remaining apple and set aside.
6. In a large skillet, cook the 2 sliced apples with ½ cup honey (or a little less) and pinch of cinnamon for 5 minutes. Place apple slices into parchment-lined pan and spread out to cover bottom of pan.
7. In a large bowl, whisk together dry ingredients. In a medium bowl, whisk together wet ingredients.
8. Combine wet into dry ingredients.
9. Fold diced apples into cake batter.
10. Spread batter into cake pan and smooth out evenly. (Batter will be thick.)
11. Bake for 35 minutes on center rack, or until toothpick comes out clean. Let cool for 15 minutes, then invert cake onto a large plate or cake stand.

Chair Yoga Poses

Most of us know that sitting all day isn’t exactly the best thing for our bodies. Ease tension and undo the damage caused by too much sitting with yoga.

Try some of the stretches pictured below like:

SPINE + SHOULDER STRETCH (first picture)
Extend your arms out in front of you and interlace your hands in front of your chest. Exhale and flip your palms upward and stretch your arms overhead.
Hold for five breaths

UPWARD PLANK ON A CHAIR (middle bottom picture)

Sit tall at the front edge of your chair with your feet hips-width apart.

Turn your hands out to the side and grab the back side of your chair. Bend your elbows behind you and inhale lift your chest up and back, careful not to let your head drop.

Hold for five breaths and release.

#AIP Friendly Sauerkraut

#Sauerkraut is easy to make and requires no special equipment and is delicious and great for gut health.

All you need to do is combine shredded cabbage with some salt and pack it into a mason jar.

The cabbage releases liquid, creating its own brining solution. Submerged in this liquid for a period of several days and once it has a flavor you like seal it and put it in the fridge to use.

Sauerkraut is made by a process called lacto-fermentation. There is ‘good’ bacteria present on the surface of cabbage (and in fact, all fruits and vegetables).

Lactobacillus is one of those bacteria, which is the same bacteria found in yogurt and many other cultured products.

When submerged in a brine, the bacteria begin to convert sugars in the cabbage into lactic acid; this is a natural preservative that inhibits the growth of harmful bacteria.

Sandor Katz – is the author of several books on fermentation and a great resource on fermentation in general, fermentation problem-solving, and fermentation health benefits.

We used napa cabbage and added fish sauce to give this kraut an Asian flare & making it Paleo & AIP friendly.

Wishing Wellness Bath Bomb Recipe

Wishing Wellness Bath Bomb

Baking soda (about 1 cup)

Citric acid (1/2 cup)

Epsom salt 1/2 cup or sea salt

Cornstarch (about 3/4 cup)

2 TBSP Coconut oil

2 tsp Witch Hazel (or water) plus a little more if needed

1 tsp rose water

Powdered dried herbs

Mix all the dry ingredients then separate and add powdered herbs to make different bombs.

Add coconut oil slowly while mixing, add rose water- slowly, add witch hazel until the mixture clumps together easily and you can pack it into ice cube trays.

Let dry overnight (longer if you live where it is humid)

Add to a jar and use.

I made rose, calendula & lavender bombs using the petals dried from our garden.

I opted to keep these as simple and natural as possible.

A great substitute if you don't have dried petals is to use essential oils.

You can use these in the bath or as a detoxifying foot soak

Homemade Coco Kefir

Kefir is a #probiotic fermented drink. Typically it is made with milk. Our kefir is made with coconut milk so it is dairy free. We drink it for #guthealth and to improve #digestion

We use it as a substitute for yogurt and eat it with fruit or make sauces like tzatziki and creamy salad dressing.

Kefir is made by adding kefir grains to milk, or in our case coconut milk. These ‘grains’ are colonies of yeast and lactic acid bacteria that resemble cauliflower, they have nothing to do with cereal.

Wishing Wellness Herbal Tinctures

Tinctures are concentrated herbal extracts made by soaking the bark, berries, leaves (dried or fresh) or roots from plants in alcohol or vinegar.

Tinctures have been around for thousands of years and are part of the foundation of traditional herbal medicine.

How to make a tincture:

-Chose the plant or plants you’d like to use. Make sure to take only parts of the plant that are safe to use.

-Depending on what you are using: Fill up a glass jar 3/4 of the way up with finely chopped fresh leaves. Fill halfway with dry leaves and roots, bark, or berries. And fill 1/4 of the way up with dried roots, bark, or berries.

-Pour grain alcohol (we use 80 proof) over the herbs to the top, covering them completely.

-Cover the jar with plastic wrap and then screw on a metal lid

-Let sit in the sun for 10min to activate

-Shake daily for about 6 weeks

-Once it’s done use a cheesecloth to strain and store in cool dark place
