Butternut squash is low in calories but high in many nutrients like: vitamin A, vitamin C, magnesium, and potassium. It is a starchy vegetable so higher in carbs but has also been referred to as a 'cold weather superfood' for its antioxidant.

Dr. Scott on Longevity and Aging Well

Aging well means maintaining your independence and mobility. 

According to a study published in the Journal of the American Medical Association, those who had a habit of walking in their youth were more mobile and independent during their old age. 

In the study participants between the ages of 70 and 89 were divided into two groups of walkers and non-walkers.

At the end of the 2.5 year study, the group which exercised regularly was 28% less likely to become disabled and 18% less likely to suffer from physical disability.

Ren's Cranberry Kompot (UTI Home Remedy)

This time of year it is easy to find fresh cranberries in most grocery stores. Typically they are used to make cranberry sauce for Thanksgiving dinner but you can also use them to make a healthy antioxidant packed drink.

Kompot, not to be confused with compote which is a stewed fruit dessert, is a typical Eastern European drink made using fresh or dried fruits.

It is really easy to make, you can control the sweetness and enjoy it hot or cold. This is a great alternative to store bought juice which is typically not healthy because of it’s added sugar. Making your own cranberry drink is also a good home remedy for UTI's.

Common fruits used to make old fashion Eastern European style Kompot in the fall are apples pears- in the summer strawberries, plums and rhubarb are typical and in the winter dried fruits like apples, apricots and raisins.

Here is our sugar free version made with cranberries and oranges.

Ren’s Cranberry Kompot

2 cups of fresh cranberries, rinsed and picked over

2 oranges sliced (with peel left on if organic)

1 cinnamon stick

2 star anise

8 cardamon pods lightly crushed

Optional lemon sliced

Add to stock pot and fill almost to the top with water, bring to a boil then simmer for 15-20 minutes.

Let cool then strain. While it’s still warm add honey to taste.

We drink this cold, warm and hot.

As an added bonus your kitchen will be filled with fresh aromatic goodness.

Feel free to substitute with frozen fruit like raspberries, blueberries, strawberries.

Wishing Wellness Apple Cake

This Apple Cake is #SugarFree #GlutenFree and #AIP #PALEO Friendly

and it still tastes good. Eat it as a dessert or breakfast!

INGREDIENTS

3 medium apples

½ cup honey

¾ cup arrowroot starch

10 tablespoons coconut flour

3 teaspoons cinnamon

1½ teaspoons baking soda

1 teaspoon cream of tartar

¼ teaspoon sea salt

¾ cup full-fat coconut milk

½ cup coconut oil, melted

¼ cup applesauce (sugar free)

⅛ cup honey

2 teaspoons apple cider vinegar

INSTRUCTIONS

1. Preheat oven to 350 degrees.

2. Grease a 9'' round cake pan or spring form with coconut oil.

3. Cut a piece of parchment to fit on bottom of cake pan and grease parchment, as well.

4. Slice 2 of the apples.

5. Dice remaining apple and set aside.

6. In a large skillet, cook the 2 sliced apples with coconut oil or butter, ½ cup honey (or a little less) and pinch of cinnamon for 5 minutes. Place apple slices into parchment-lined pan and spread out to cover bottom of pan.

7. In a large bowl, whisk together dry ingredients. In a medium bowl, whisk together wet ingredients.

8. Combine wet into dry ingredients.

9. Fold diced apples into cake batter.

10. Spread batter into cake pan and smooth out evenly. (Batter will be thick.)

11. Bake for 35 minutes on center rack, or until toothpick comes out clean. Let cool for 15 minutes, then invert cake onto a large plate or cake stand.

Pesto Recipe by Dr. Scott:

Vegan & Gluten Free Pesto 

1 1/2 cups Organic Spinach, leaves- we also have use kale, swiss chard and beet greens. 

1 1/2 cups Basil Leaves

1 tablespoon Nutritional yeast

2 cloves of garlic

1/2 cups of walnuts 

1 tsp Salt 

1/2 cup olive oil 

Mix all ingredients except olive oil in food processor. Once it is pulverized start slowly adding oil. 

Keep in mason jar in the fridge, you can add a layer of olive oil on top to keep it extra fresh in the fridge.

It can often be hard to tell whether you or a loved one has a cold, flu or COVID but understanding the differences can help us, help you, get the right treatment quickly.

The flu, COVID-19 and the common cold have very similar symptoms but each is caused by a different virus. The flu is caused by the influenza virus, COVID is caused a Coronavirus called SARS-CoV2 but the cold may be caused by a number of viruses. All of them are highly contagious. In general, flu symptoms have more severe body aches than the common cold and tends to hit you all of sudden. Cold symptoms usually come on more slowly over several day. COVID has a much wider range of symptoms, it can be mild like a cold or severe like a flu. The most distinguishing feature is loss of smell or taste, but is not present in everyone who has it. COVID is more commonly associated with diarrhea and vomiting. Flu's rarely have diarrhea or vomiting in adults and cold never do.

The one thing you can do is prevent a cold, flu or COVID by taking a few common sense precautions. Your number one line of defense against these illnesses is to wash your hands. It can also be helpful to take care of your immune system. You might consider making lifestyle changes that support your immune system or eating immunity boosting foods or taking supplements.
