Wishing Wellness Chimichurri
Wishing Wellness Chimichurri
Chimichurri is a traditional Argentinian marinade and sauce.
This recipe yields about two cups- we keep it in a glass container and use as a sauce, dressing, marinade etc.
Keeps well for a week or two. Feel free to substitute with any fresh herbs that you have on hand. This is a very forgiving recipe and tastes great every time we’ve experimented with it.
1 shallot, finely chopped
1 chile or jalapeño
lots of garlic cloves, finely chopped
1/2 cup red wine vinegar
1 tsp. salt
1/2 cup chopped cilantro
1/2 cup chopped parsley
2 Tbsp. finely chopped oregano or za’atar
3/4 cup olive oil
Combine all ingredients and let sit for at least an hour in the fridge. We use a food processor which makes the ‘chopping’ aspect of the recipe much faster. If you are using a food processor you can add all the ingredients in and mix together.

Qigong movements can help improve joint flexibility, muscle strength, and range of motion. With its meditative elements and focus on deep, diaphragmatic breathing, qigong is also an effective way to manage tension and anxiety.
Historically, yoga and qigong have different movements and postures and focus, but they both similarly use the breath to move energy and invoke a meditative state.
Yoga and qigong can also be used together to bring a more heightened awareness.

Health Coaching at Wishing Wellness
Ren is a trained and certified professional health coach who can help you reach your best health and well-being. She can help you develop a personal wellness plan and inspire and challenge you to go beyond what you would do alone.
What can I expect from my Health Coach?
During the first session, Ren will help you identify your priorities and develop a personal wellness vision, a plan and realistic goals.
In our basic plan you will have a total of 4 appointments, which can be scheduled weekly, bi-weekly or once a month. We will meet via video or over the telephone. During these sessions, you will review the progress toward your wellness vision and goals, address any barriers and agree on a set of reasonable goals for the following session.
Typically at the end of your coaching sessions, you can expect to have made significant progress and feel energized and confident that your goals are reachable.

In Yin Yoga, seated and reclined postures are held for extended time to help your body release tension, stagnant energy and toxic stress build up in the muscles, tendons and facia.
It allows you to tune into your body and bring focus to various parts of your body. By virtue of holding poses for several minutes at a time, you are challenging not only your body but your mind into stillness.
You can do slow and stretchy yoga anywhere and don’t need much space or even a mat. It’s also great when you use props and adds new elements to your stretches.
This practice is ideal for anyone with a high intensity life looking to create balance and take time to slow down. This practice is also good for beginner and anyone looking for a more restorative approach to yoga and stretching.

Cucumber Dill Salad Dressing/ Dip
We love this dairy free dressing. We use it on salads and as a dip for snacks.
Ingredients:
1/2 cucumber
1/2 cup coconut cream
2 garlic cloves (or more) minced
2 tbsp olive oil
1 tbsp lemon juice
1/2 tsp of salt
1-2 tbsp dill, finely chopped or you can use dry dill
Instructions:
Peel cucumber
Slice in half lengthwise and remove seeds by scraping them out with a spoon.
Chop the cucumber, should have approximately 1/2 cup.
Place cucumber, coconut cream, olive oil, garlic, lemon juice & salt in blender or food processor
Blend until smooth.
Mix in dill
Enjoy!

Functional Medicine Health Coaching recognizes and supports you as a whole person: your values, goals, work, balance, fulfillment and life purpose.
Ren uses reflective listening, exploration and positive forward improvement to work proactively with clients and to accelerate progress by providing greater focus and awareness of choice.
Health Coaching is best performed over several sessions on a consistent basis. Meetings can be scheduled over video or phone and are generally between 30-60 minutes.
Health Coaching is included in our 6 month Functional Medicine Program. We also offer Health Coaching as an add on to our Primary Care Program.

Wishing Wellness Garden Jasmine Infused Oil
How to make Jasmine Infused Oil
1 cup of fresh jasmine blossoms
1 cup of carrier oil such as, jojoba oil, almond oil, Argan oil, or Avocado oil
1 Mason Jar- sterilized
Pick jasmine blossoms in the morning. Lay flat on a tea towel and allow to dry
Add oil then place the jar on a windowsill and allow the blossoms to infuse into the oil for about 2 weeks, shaking the jar about once a day.
After about two weeks, use a cheesecloth to strain all blossoms from the oil
For a stronger aroma, you can do a re-infusion by taking the same infused oil and putting another cup of fresh jasmine in it and infusing for another two weeks, then straining.
Store the jasmine infused oil in a glass sealed jar
Apply about 2 Tablespoons to the skin as a moisturizer, or add a teaspoon to a bath.

Almond Butter Cups
Almond Butter Cups / Healthy Reese's peanut butter cup
1/2 cup unsweetened chocolate chips
1 tsp melted coconut oil
3/4 cup almond butter
3/4 cup almond flour
2tbs cup maple syrup or honey
1 scoop collagen (optional)
A few dashes of cinnamon
A few dashes of salt
Mix the almond flour, collagen (if you choose), cinnamon & salt, nut butter, maple syrup together until it forms a thick dough and set aside. Combine chocolate with coconut oil and heat until melted. Line your cupcake pan with baking cups or use a silicon mini muffin tray, and put just enough chocolate in each to lightly fill the bottom. Fill each cup with the dough, you can form little patties and drop them in, and top with the rest of the chocolate.

How to #GreenSmoothie
The big mistake people make with smoothies is too much sugar, usually, because there is a lot of high glycemic fruit.
A smoothie should be mostly green leafy vegetables, kale, swiss chard, spinach, mixed organic greens or even zucchini or cauliflower. A hand full of low glycemic fruit like blueberries or raspberries are a great source of antioxidants.
Healthy fats are also essential, coconut or MCT oil, chia seeds, coconut milk or almond milk.
Collagen protein powder is also great for gut health. (optional)
Avoid large amounts of high sugar fruits like bananas and mangos.
You can also add turmeric, ginger, cocoa powder or maca for extra anti-inflammatory and antioxidant properties.

Gut Health Wishing Wellness Functional Medicine
#kimchi is healthy because it is #fermented and supplies our gut with healthy #bacteria to help balance it.
Fermentation dates back thousands of years.
To make kimchi napa cabbage is soaked in salt water to kill off any harmful #bacteria. And then, the remaining bacteria called lactobacillus, the beneficial bacteria found in yoghurt and in a healthy gut, converts the sugars and carbohydrate into lactic acid, which preserves the vegetables and gives kimchi its signature tang.
Add other healthy ingredients like ginger, garlic, daikon and chili peppers and you’ve created a super food in a jar.
We add just a small dollop to our meals, either breakfast, lunch or dinner.
