Natural Hot Springs

Had a great day trip to Tecopa natural hot springs, a therapeutic geothermal mineral-rich hot springs. 

The mud/clay bath is considered to have healing properties and we felt it was relaxing and made our skin feel softer. 

Just over an hour drive from Las Vegas- definitely worth the trip! 

We brought our own lunch as there are not many options in the area.

Cashew Cream Sauce

This creamy (Alfredo like) sauce is versatile and can be used on pasta, as a white sauce on pizza and to added extra flavor to veggies. We like it on anything with mushrooms. It keeps well in the fridge for about a week.

Cashew Cream Sauce

1 1/2 cups cashews

1 cup water

1tsp garlic

1/2 tsp salt

1/8 cup Nutritional yeast

Mix in a blender- we use a Vitamix. Ready to serve.

We keep it in a glass container in the fridge for up to a week.

Hiking is a great way to spend time in nature and get exercise.

Hiking is good for our cardiovascular health and it helps build stabilizing muscles in the legs and core that improve balance.

There is a wealth of research supporting the notion that connecting with nature improves mental health and wellbeing. The Japanese practice of forest bathing is a practice first studied in the 1980’s which involves taking a walk or hike in the woods as a way to reconnect with nature and disconnect from the modern world.

Mini Banana Muffins #GlutenFree

Do you have ten minutes and a couple of ripe bananas?

Make these! You'll be glad you did! They also freeze really well!

To make you'll need:

Two ripe bananas

2 Eggs

1 Cup of Peanut Butter or Almond Butter (we use sugar free)

2 tsp Vanilla Extract

2 tbsp Honey (We use local)

1/2 tbsp Baking Powder

4 Chocolate Chips per mini bite.

Mix all the ingredients except for the chocolate chips together- use coconut oil to grease the mini tins and scoop it in. Add chocolate chips.

Bake at 400F for 8min

Eat The Rainbow

You may have heard us talk about the importance of ‘eating the rainbow’.

Fruits and vegetables fall into different color categories: red, purple/blue, green, white/brown and yellow/orange and eating a variety of colors is a good measure of whole nutrition.

Green foods like spinach, collard greens, mustard greens, turnip greens, yellow corn, green peas, avocado, honeydew melon contain carotenoids, lutein, and zeaxanthin, which are believed to reduce the macular degeneration that comes with aging.

Green foods like broccoli, Brussels sprouts, cabbage, bok choy, kale contain the chemicals sulforaphane and isocyanate which help ward off cancer by inhibiting carcinogens.

Each color carries its own set of unique disease fighting substances and eating a variety of colors is a great way to guarantee your body is getting a variety of minerals and nutrients it needs.

Wishing Wellness Healthy Apple Cake

This Apple Cake is #SugarFree #GlutenFree and #AIP #PALEO Friendly
and it still tastes good. Eat it as a dessert or breakfast!

INGREDIENTS
3 medium apples
½ cup honey
¾ cup arrowroot starch
10 tablespoons coconut flour
3 teaspoons cinnamon
1½ teaspoons baking soda
1 teaspoon cream of tartar
¼ teaspoon sea salt
¾ cup full-fat coconut milk
½ cup coconut oil, melted
¼ cup applesauce (sugar free)
⅛ cup honey
2 teaspoons apple cider vinegar

INSTRUCTIONS
1. Preheat oven to 350 degrees.
2. Grease a 9'' round cake pan or spring form with coconut oil.
3. Cut a piece of parchment to fit on bottom of cake pan and grease parchment, as well.
4. Slice 2 of the apples.
5. Dice remaining apple and set aside.
6. In a large skillet, cook the 2 sliced apples with ½ cup honey (or a little less) and pinch of cinnamon for 5 minutes. Place apple slices into parchment-lined pan and spread out to cover bottom of pan.
7. In a large bowl, whisk together dry ingredients. In a medium bowl, whisk together wet ingredients.
8. Combine wet into dry ingredients.
9. Fold diced apples into cake batter.
10. Spread batter into cake pan and smooth out evenly. (Batter will be thick.)
11. Bake for 35 minutes on center rack, or until toothpick comes out clean. Let cool for 15 minutes, then invert cake onto a large plate or cake stand.

Wishing Wellness Make Your Own Cranberry Juice

Kompot, not to be confused with compote which is a stewed fruit dessert, is a typical Eastern European drink made using fresh or dried fruits.

It is really easy to make, you can control the sweetness and enjoy it hot or cold. This is a great alternative to store bought juice which is typically not healthy because of it’s added sugar. Making your own cranberry drink is also a good home remedy for UTI's.

Here is our sugar free version made with cranberries and oranges.

Ren’s Cranberry Kompot

2 cups of fresh cranberries, rinsed and picked over
2 oranges sliced (with peel left on if organic)
1 cinnamon stick
2 star anise
8 cardamon pods lightly crushed
Optional lemon sliced

Add to stock pot and fill almost to the top with water, bring to a boil then simmer for 15-20 minutes.
Let cool then strain. While it’s still warm add honey to taste.
We drink this cold, warm and hot.

As an added bonus your kitchen will be filled with fresh aromatic goodness.
Feel free to substitute with frozen fruit.
