Functional Medicine is a progressive approach to health that looks at lifestyle as a key factor to healing. What we eat plays a big role in our health along with our emotional, environmental and psychological well-being.

One of the ways we practice balanced health is by growing our own medicinal garden. In the not so distant past most people had knowledge and access to medicinal herbs and used them to prevent, and treat common ailments. 

Growing our own medicine and food is empowering and gives us the opportunity to spend time in nature, get exercise, contribute in a positive way to our ecosystem as well gain knowledge and help others.

Cashew Yogurt

Cashew Yogurt:

This yields about four medium size jars and can stay in the fridge for up to a week- maybe longer- we eat it daily for about a week. You will need an Instant Pot and Vitamix to make this recipe.

Cashew Yogurt Recipe:

Soak 3 cups of cashews for 2 hours
Rinse and add 2.5 cups of water
Blend in the Vitamix until smooth
Add 6 capsules of probiotics
Stir mixture
Add to mason jars loosely tighten the lid
Fill the instant pot with water to the base of lids, don’t cover lids with water
Put on yoghurt setting for 8-12 hours- we do this overnight.

The next morning you'll have yummy dairy free yogurt!

Prepping Fresh Ginger

These are ginger cakes which we make regularly.

We buy fresh organic ginger and pulse it in the food processor until it’s the desired consistency. (We leave skin on)

We then fill up 1 Tbsp into silicone mini muffin trays, place them on metal cookie trays and let them freeze.

Once frozen, we store them in a ziplock.

We these are easy to use when cooking, making recipes and using for tea.

Ginger may help with chronic digestive problems like gas, indigestion, bloating or constipation.

Ginger had antioxidants, compounds that prevent stress and damage to your body's DNA. They may help your body fight off chronic diseases like high blood pressure, heart disease, and diseases of the lungs and also promote healthy aging.

Dairy-Free Moussaka

This dairy free #moussaka is one of our favorite meals to make. We use layers of vegetables and a creamy cauliflower based top layer.

Protein & Eggplant

  • 1 Tbsp dried oregano or Zaatar 

  • 1 medium eggplant sliced crosswise into 1/4-inch-thick rounds

  • 3 medium zucchini sliced lengthwise

  • ¼ cup plus 2 Tbsp extra-virgin olive oil divided

  • Sea salt to taste

  • 1 pound ground meat: lamb or beef / vegan: chickpeas, lentils, kidney beans)

  • 1 tsp ground Cinnamon 

  • 1 tsp paprika

  • 1 tablespoon tomato paste

  • ¼ cup bone broth

  • 1 medium onion chopped

  • 4 garlic cloves finely grated, divided

  • 1 Tbsp chopped mint divided

  • 2-3 fresh vine tomatoes chopped or 1 can of diced tomatoes

Dairy-free Cauliflower Bechamel Sauce

  • 2 cups cauliflower steamed or 1 bag of fried cauliflower rice

  • 1 cup coconut cream- keep a can of coconut milk in the refrigerator and use the cream on the top 

  • 2 Tbsp nutritional yeast

  • 1/2 cup water

  • 2 Tbsp arrowroot starch/flour

  • 1/2 Tbsp lemon juice

  • 1/2 tsp sea salt

Instructions

  1. Preheat oven to 400f degrees and line a large baking sheet with parchment paper.

  2. Slice eggplant & zucchini in ¼ inch slices and coat with olive oil and season with sea salt on a baking sheet. Bake in a single layer (slices can touch each other a bit for more room) and roast for approx. 30 mins. until cooked and golden, flipping half-way.

  3. Meanwhile, add 2 Tbsp olive oil to a large skillet and heat over medium. Add the ground protein, seasoning with salt, paprika, and cinnamon: cook and stir for approx. 10 mins. Remove meat from the pan and set aside, leaving fat/oil in the pan (or adding more if needed).

  4. Next, add the chopped onion and mint, continue to saute while seasoning with salt until translucent, approx. 5-8 mins. Add garlic for the last for a few minutes. Then add in the tomato paste and lastly add bone broth, stirring occasionally for 3 minutes.

  5. Add tomatoes and break up with a wooden spoon into small pieces. Add protein back in, stirring occasionally until most of the liquid is evaporated and the mixture looks like a thick meat sauce, 5–7 minutes. Set aside and make the bechamel sauce.

Dairy-free Cauliflower Bechamel Sauce

  1. In a pot, steam cauliflower florets with boiling water until it's tender when pricked with a fork (approx. 8 mins or use 1 bag of frozen cauliflower rice. 

  2. Meanwhile, add coconut CREAM (not milk), nutritional yeast, and lemon juice to a high-speed blender.

  3. Separately, take 1/2 cup of water and add arrowroot flour to it. Stir it around to create a slurry. It will thicken slightly in the cup, make sure it's stirred well with no clumps at the bottom. Once that's mixed well, pour HALF into the blender. Save the other half in case you need it (depending on how large your baking dish is, you might want more liquid).

  4. When cauliflower is ready, add it to the blender, season with salt. Blend everything for a minute or so, until a thick sauce has formed.

Assemble:

  1. Grease an 8x8 baking pan with olive oil. Layer half of the eggplant/zucchini  in pan, covering the bottom entirely. Spread half protein mixture over eggplant/zucchini in an even layer. Repeat to make another layer of each. Top with cauliflower béchamel.

  2. Bake moussaka on a middle rack in the oven until bubbling and béchamel are browned in spots, 30–45 minutes. Let cool for 30 minutes before serving. Serve or store in the fridge or freezer.

Gua sha aims to move energy, known as qi or chi, around the body.

Facial Gua sha relaxes tension in facial muscles which is purported to reduce fine lines. In theory stimulating the facial skin and muscles using gua sha can tone skin and promote increased skin elasticity.

Our face is often overlooked, even during a massage. We often hold a lot of tension in our forehead and jaw line. Massaging these areas with a well designed (ancient) tool helps bring focus and energy to your face and it only takes a few minutes to put on a facial oil and massaging.

This is a great after shower or pre-bed routine.

Gluten Free Quiche

This time of year it is easy to find #glutenfree pie crusts in most grocery stores.

We use gluten free pie crust to make quiches. You can fill them with any vegetables, mushrooms or proteins you like and add your quiche filling.

For these we used chopped spinach, seasoning: salt, pepper, garlic powder, nutmeg, eggs and almond milk.

They are great for any meal of the day!

Wishing Wellness Cranberry Kompot

This time of year it is easy to find fresh cranberries in most grocery stores. Typically they are used to make cranberry sauce for Thanksgiving dinner but you can also use them to make a healthy antioxidant packed drink.

Kompot, not to be confused with compote which is a stewed fruit dessert, is a typical Eastern European drink made using fresh or dried fruits.

It is really easy to make, you can control the sweetness and enjoy it hot or cold. This is a great alternative to store bought juice which is typically not healthy because of it’s added sugar. Making your own cranberry drink is also a great home remedy for bladder infections #UTI.

As an added bonus your kitchen will be filled with fresh fragrant aromatic goodness.

Ren’s Cranberry Kompot

4 cups (minimum) of fresh cranberries, rinsed and picked over

1/2 lemon sliced (with peel left on if organic)

1 cinnamon stick

2 star anise

8 cardamon pods lightly crushed

Add to stock pot and fill 3/4 to the top with water, bring to a boil then simmer for 15-20 minutes.

Let cool then strain. While it’s still warm add honey to taste.

We drink this cold, warm and hot.

Wishing Wellness Banana Bread- One bowl!

3 very ripe bananas

1 1/4 cup almond meal

1 1/4 cup gluten-free flour

1 1/2 cup gluten-free oats

1/2 tsp vanilla extract

1 egg (or sub 1 chia or flax egg)

3 Tbsp avocado or coconut oil

1/2 cup maple syrup

3 1/2 tsp baking powder

1 tsp sea salt

1/2 tsp ground cinnamon

3/4 cup almond or dairy-free milk

Bake at 350 F for 70 minutes.
