Broccoli Soup- Dairy Free, Gluten Free

We make this soup weekly. It can be adapted to be keto/low carb friendly by omitting the sweet potatoes and carrots. Still tastes great and has a nice consistency.

INGREDIENTS

  • 1/4 cup coconut oil or avocado oil

  • 2 cup chopped sweet potatoes or carrots (for Keto omit)

  • 8 cups bone broth

  • 1 cup coconut milk

  • 1/4 cup nutritional yeast

  • 1 cup finely chopped onion

  • 1-2 tsp Salt or more to taste

  • 4 cups broccoli florets

  • Chopped chives (optional)

DIRECTIONS

  • In a large pot, heat 1/4 cup oil over medium low heat. Add Onions and sauté until translucent 4-5 min.

  • Add Garlic and cook for another minute until starting to brown.

  • Add broccoli, sweet potatoes or carrots if using and stir. Season with salt Stirring occasionally for 2-3 min

  • Add enough broth to allow you to scrape any browned bits off the bottom of the pan.

  • Add the rest of the broth and bring to a simmer then cover and cook until veggies are soft

  • Turn heat off and using a hand blender, blend until smooth. Turn heat to low.

  • Add coconut milk, nutritional yeast. Stir until combined.

  • Heat through. Taste for salt, and add more if necessary. Garnish with chopped chives or any fresh herbs and serve!

Here at Wishing Wellness we are huge advocates of eating a healthy diet. Processed foods, preservatives, refined sugar, gluten and dairy are hard on the body as they increase inflammation.  Eliminating those foods and incorporating high quality vegetables, fruits, healthy proteins and fats is the best thing you can do for your body. Also eating fermented foods like kimchi or sauerkraut support the immune system by increasing helpful bacteria within the microbiome. Using fresh herbs and foods like ginger, garlic and turmeric will also help reduce inflammation thus help fight infection more effectively. 

Sleep is vital for the development of your body’s immune system. Poor sleep or chronic insomnia can increase stress hormones, promote inflammation and make your body more susceptible to infection. 

Exercise can help improve your sleep and fight stress, which are both important for immune function. Getting just 30 minutes of outdoor walking not only helps strength your body but it is also great to get fresh air and sunshine. 

If you are going to drink alcohol drinking in moderation is best. Alcohol is not good for your gut’s microbiome and can impair immune cells. If you drink in the evening, clear alcohol (like vodka), is better metabolized by your body compared to high-sugar drinks like wine. 

We talk a lot about self care on our Wishing Wellness social media. Self care is vital for our mental well-being which ultimately helps support our immune system. Stress is a normal part of life, and these days especially, it’s important to take active steps towards minimizing stress. Wishing Wellness Apple Cake

This Apple Cake is #SugarFree #GlutenFree and #AIP #PALEO Friendly
and it still tastes good. Eat it as a dessert or breakfast!

INGREDIENTS
3 medium apples
½ cup honey
¾ cup arrowroot starch
10 tablespoons coconut flour
3 teaspoons cinnamon
1½ teaspoons baking soda
1 teaspoon cream of tartar
¼ teaspoon sea salt
¾ cup full-fat coconut milk
½ cup coconut oil, melted
¼ cup applesauce (sugar free)
⅛ cup honey
2 teaspoons apple cider vinegar

INSTRUCTIONS
1. Preheat oven to 350 degrees.
2. Grease a 9'' round cake pan or spring form with coconut oil.
3. Cut a piece of parchment to fit on bottom of cake pan and grease parchment, as well.
4. Slice 2 of the apples.
5. Dice remaining apple and set aside.
6. In a large skillet, cook the 2 sliced apples with ½ cup honey (or a little less) and pinch of cinnamon for 5 minutes. Place apple slices into parchment-lined pan and spread out to cover bottom of pan.
7. In a large bowl, whisk together dry ingredients. In a medium bowl, whisk together wet ingredients.
8. Combine wet into dry ingredients.
9. Fold diced apples into cake batter.
10. Spread batter into cake pan and smooth out evenly. (Batter will be thick.)
11. Bake for 35 minutes on center rack, or until toothpick comes out clean. Let cool for 15 minutes, then invert cake onto a large plate or cake stand.

Wishing Wellness Fire Cider

Fire cider is purported to restore and invigorate one's body and may have benefits that include:  immunity & energy boost, preventing colds and flus, easing sinus congestion, lowering blood sugar, curbing cravings and aiding in digestion.

There are many different recipes online. As always we like to use what we have. This batch includes: onion, garlic, horseradish, ginger, chilis & lemon.

Layer it up in a sterile jar and fill with organic apple cider vinegar. Let steep for 4 weeks and then use it as a preventative medicine or when you start feeling a cold or flu coming on.

Wishing Wellness Cashew Yogurt Recipe

Cashew Yogurt:

This yields about four medium size jars and can stay in the fridge for up to a week- maybe longer- we eat it daily for about a week. You will need an Instant Pot and Vitamix to make this recipe.

Cashew Yogurt Recipe:

Soak 3 cups of cashews for 2 hours
Rinse and add 2.5 cups of water
Blend in the Vitamix until smooth
Add 6 capsules of probiotics
Stir mixture
Add to mason jars loosely tighten the lid
Fill the instant pot with water to the base of lids, don’t cover lids with water
Put on yoghurt setting for 8-12 hours- we do this overnight.

The next morning you'll have yummy dairy free yogurt!

Wishing Wellness Breakfast Oatmeal Pie

2.5 cups Oats (gluten Free)

¾ cup almond flower

3 cups almond milk

1 tbsp maple syrup

2 tbsp chia seeds

2 tsp vanilla extract

1.5 tsp cinnamon

1 tsp baking powder

¼ tsp salt

¼ cup pecan pieces

1 cup pecan halves

1 tbsp olive oil

3 tbsp maple syrup

Pinch of salt 

⅓ cup coconut yogurt 

Preheat oven to 350F

Mix ingredients together in a bowl and then transfer to a 9 inch pie pain

Make candied pecans but heating oil, maple syrup and salt on a pan, then add pecans over medium heat for 3-4 minutes

Place your candied pecans on top of the oats then bake for 35-45 minutes 

Slice and top with yoghurt and serve 

Wishing Wellness Pesto Recipe

Pesto is a good 'sauce' to have on hand and it's a great way to get veggies & greens into a meal. We use it with gluten free pasta and on almost any protein.


Pesto Recipe by Dr. Scott:

(Vegan & Gluten Free)

1 1/2 cups Organic Spinach, leaves- we also have used kale, swiss chard and beet greens.

1 1/2 cups Basil Leaves

1 tablespoon Nutritional yeast

1/2 cups of walnuts

1 tsp Salt

1/2 cup olive oil

Mix all ingredients except olive oil in the food processor. Once it is pulverized, start slowly adding oil.

Keep in a mason jar in the fridge, you can add a layer of olive oil on top to keep it extra fresh in the fridge or freeze it in a silicon muffin tray and then transfer to a bag and take out small pieces as needed.

Ingredients

  • 1/2 cup whole rolled oats

  • 1/2 cup almond milk or light coconut milk, more as needed

    Mix ingredients in a jar and shake well.

    Optional: dash of cinnamon, a drop of vanilla extract

Growing a garden, like most things in life, takes patience.  

#LasVegas is a #Zone9 growing area and trial and error and mother nature have been the best teachers in figuring out what #medicinalherbs grow well in our #garden 

Here are a few medicinal herbs we've had success growing: 

#Echinacea is easy to grow from seed and takes about 10-20 days to germinate.  Sow outdoors about 1/2 inch deep. They are easy-care, low-water plants that like full sun and produce strong pink blooms which attract bees and butterflies.

#Astragalus seeds require a 21-day cold period of stratification to promote germination followed by mild scarification with fine-grade sandpaper, the seeds take 3-10 days to germinate. They can be transplanted outdoors in early spring. When transplanting, space plants approximately 15" apart. They like full to partial sun and well drained soil. 

#WhiteSage grows easily from seed and requires little maintenance once established. Start seeds indoors in early spring. Germination takes approximately 14 to 21 days. Plant outdoors in full sun and well drained soil.

Wishing Wellness Sauerkraut

Easy #sauerkraut

Sauerkraut is easy to make and requires no special equipment and is delicious and great for gut health.

All you need to do is combine shredded cabbage with some salt and pack it into a mason jar.
The cabbage releases liquid, creating its own brining solution. Submerged in this liquid for a period of several days and once it has a flavor you like seal it and put it in the fridge to use.

Sauerkraut is made by a process called lacto-fermentation. There is ‘good’ bacteria present on the surface of cabbage (and in fact, all fruits and vegetables).
Lactobacillus is one of those bacteria, which is the same bacteria found in yogurt and many other cultured products.

When submerged in a brine, the bacteria begin to convert sugars in the cabbage into lactic acid; this is a natural preservative that inhibits the growth of harmful bacteria.

We added garlic & horseradish to this recipe making it Paleo & AIP friendly.
